The six-minute egg

Six minutes is the number cooks give for an egg with a set white and a yolk that is still soft and jammy — lowered into water that is already at a rolling boil, then straight into cold water when the time is up.

It is a good example of how narrow the window is for things that change state. At five minutes the white near the yolk is still loose; at eight the yolk has gone pale and firm. A minute either way is a different breakfast, which is why guessing by eye does not work: nothing on the outside of the shell tells you what is happening inside.

Egg size and fridge temperature shift it by thirty seconds or so. Time one batch, note what you got, and adjust once — after that the number is yours.
